SeaWorld's Discovery Cove Mini-Park is truly amazing, but expensive. But if you want to meet dolphins face to face, to no better way to do it.
A cheap and very interesting and fun option is to visit Blue Springs State Park, north of Orlando. You can take a kayak on the river, the sea cows often. It is cheap and usually not too crowded, but it's worth the short drive to I-4 if you want that sort of thing. You are very likely to see alligators in the streets, but it is a safe journey never to be forgotten.
Note: Blue Springs swimming dock is temporarily closed due to the recent floods, but it seems, will soon be reopened. Probably has no impact on the kayaks, but you must call to be sure.
